Hokkori was born from a simple passion: doing things well.

In the heart of Cánovas, Valencia, we have created a restaurant devoted to Japanese cuisine, where respect for the produce, precise technique and hospitality come together in an experience made to be enjoyed without hurry.

Our cooking seeks to respect every ingredient and find the balance between Japanese tradition and contemporary creativity, from sushi, nigiri and sashimi to tempura and hot dishes.

The meaning of Hokkori

Hokkori (ほっこり) is a Japanese expression for a feeling that is hard to sum up in one word: warmth, wellbeing, comfort and that quiet pleasure we feel when something makes us feel truly good.

That is the spirit we want to share at Hokkori.

From the moment the door opens to the last bite, we look after the atmosphere, the service and every detail on the table to create a place to unwind, share and enjoy.

Produce as the starting point

For us, everything starts with the produce.

We carefully select fish, seafood and quality ingredients, seeking the balance between freshness, texture and flavour. At our counter, every cut and every piece is prepared with precision so that the ingredient is the true star.

Nigiri, sashimi and signature sushi share our menu with tempura and a range of hot dishes inspired by Japanese gastronomy.

Creativity is there, but never above the produce.

We want Hokkori to be a place to come for a special meal, to share a dinner, to celebrate a moment or simply to enjoy good sushi and Japanese cuisine in Cánovas, Valencia.

Our story

“Tapear”, the Spanish word for eating small bites, is something we have adapted to Japanese style. In Japan people share small plates too! At Hokkori we wanted to bring our typical tapas culture to Japanese cuisine. Our experience and innovation in Japanese cooking led us to create a very original and fun menu: you can taste authentic Japan in a single bite.
